Just wanted to ask , if anyone of you guys knows about differences between the European ( the german in particular -_- ) and the uncut US version. Because thats my first launch title, if I knew it was cut i'd change my order :) ... cant find any info on that though

I daubt there would really be any difference.
The only difference i know is the Japanese version of Motorstorm which doesn't have online play.

Yes there was no blood/gore in the japanese version. on these forums somewhere someone put the crack to open it up

Nothing different but you are only allowed to play online with people from your Region.

They are changing that soon with an update so you can challenge worldwide players.
