Going by the typically used 4th definition, I'd say it incredibly safe to describe Skyrim, or anything pertaining to Skyrim as being EPIC! True story! I enjoy using the word in my daily life to describe anything containing large amounts of awesomeness or grand proportions like a boss.

On a more serious note, I almost don't want to get this game for fear of neglecting my other games. I still have to do my achievement run for Batman and BF3, I'm still playing through Uncharted 3. If I get Skyrim, I won't touch anything for at least six months... happened with Oblivion.
Epic is okay because it means grand, huge.
I actually find it cringe worthy how much people use the word "epic", along with "fail" and some others.
But it's over usage has caused the word to become fatigued and it's intention to convey daunting scale or a grandiose moment is numbed.

It is definitely getting tiresome, I for one say it if I see something truly true to its meaning.
And that one is definitely Skyrim.
