I got to Soul Calibur IV and they had destroyed Ivy, and that put me off the fighter for good, anything past II was dead to me.

But you say V is a worthy contender? As long as Ivy doesn't have her ridiculous 3-state set up, it should be worth a shot, bad enough maintaining whip state, but to somehow morph to coil state was just far too much.

Ivy changed quite a bit afaik, but I'm not really an Ivy player. SCV is the biggest shake-up in the series. A lot of favorites are missing from the roster entirely.

My main from SC2-4 isn't even in the game. They did this to me in SC2 initially too. You get over it. It's my favorite new 3D fighter in quite a while.. not that there's been much to chose from.
