I also think that it may have to do with complicating gameplay. If you give animated feedback for every hit you do to an enemy then it should apply to you too in 3rd person animations.
Adding in effects like staggering your character with a scripted animation means that has to happen in 1st person as well.
Who wants to spend all their time in combat being staggered and stunlocked in scripted recoil animations for EVERY hit? This is where I actually think that Oblivion had it right, player recoils for being hit with power attacks, critical hits and block rebuffs. Otherwise I think it'd just get too broken up and slow for combat to go anywhere, nerfing the exploration experience as well because if you can't get somewhere at a reasonable pace without avoiding combat why have it in the first place?
