I believe that 1080p 30 fps is probably not in the best interests for this particular game. I would look towards using effective post AA solutions. The major reason behind that, if you look at this video and other videos from their pcs you can see how much of an impact the shaders and drawings distance makes.
Even at 900p, the game looks far more complete with these details left back in the game. The food in this video looks incredibly lifelike at the end.

I also think the game should see a lot more polish before release. They said the whole game is super rough because they are working on the whole thing in tandum rather than polishing up individual sections. We will see.
I don't even think the PC version looks like the highest spec of the engine, but more a target render for the PS4 version. You could clearly get much better IQ and AA, etc on PC if you wanted to than what is shown here...

The fishing looks very meh to me though. And it's a bit fun that the prettiest graphics seen form this game so far is a static model of a cooked piece of fish :P

Shaders only look different here because it had just rained, so the wet look is applied to the rocks, mud, puddles were formed, etc. compared to the dryness in other videos. Graphically it looks pretty similar though.

They're definitely displaying a target render, which Pc is
commonly used to display target renders. Quite a few details of the target can be see in the video before of course. Their optimizations have been around performance in particular, ever since the reception of the duscae demo.
There is still room for gradual optimising. It's most likely though not going to close the gap any further than what we've seen, without sacrificing something for performance. Tabata said if possible they'll reach 1080p, and i say if possible keep the drawing distance and shaders in exchange for pixels. The atmosphere looks more complete with further drawing distance, richer shaders and effects.
